Winesecrets’ Laboratory and Winemaking Staff can employ an array of bench-top trials in order to investigate and demonstrate final sensory characters of your wine after treatment with our innovative processes. The goal is to provide representative samples of each wine examined to the customer for sensory trials, along with approximate pricing for full scale processing.   

What do we need from you?

Test Track Requests and Volumes

One case of finished, filtered 750ml bottles gets you:

Alcohol Adjustment

The Test Track   demonstrates the effects of alcohol reduction by any method. Alcohol reduction balances the aromatics and reduces bitter flavor and hot sensation in high alcohol wine.

  • Six 750ml bottles returned at a reduced alcohol level (no less than 10%).
  • Six 750ml bottles in a specific range of points, for example, 13.0-13.5% at 0.1% intervals or 12.0 to 14.5 at 0 .5% intervals.
  • Ten 375ml bottles in a specific range of points, for example, 13.0-13.9% at 0.1% intervals.
  • Anything outside these parameters requires 2 cases and will incur extra charges. These limits are also for clean, filtered wine below 50 NTUs.   

UF Concentration

  • Three 750mls bottles at three different concentration levels, preferably 25% and below. 
  • Anything outside these parameters requires 2 cases and will incur extra charges. These limits are also for clean, filtered wine below 50 NTUs.   
Test Track Processes Available:
  • Alcohol reduction  

  Alcohol reduction balances the aromatics and reduces bitter flavor and hot sensation in high alcohol wine.

  • Artisan High proof additions

Demonstrates an addition of Winesecrets specialty high proof to increase alcohol. This will lift additional aromatics, create a richer mouth feel, and improves the perception of sweetness.

  • Color Concentration through Ultrafiltration

Picture a post-fermentation saignee. We can demonstrate our TTB-compliant color intensification technology to deepen color, concentrate aromatics, and add structure to phenolic profile without blending or additions.

  • Targeted removal of undesired flavor components

We trial our filtration methods to isolate these compounds and investigate treatment methods to remove them, the goal being to create a recipe that reduces the perception of the taint without compromising the wine's inherent flavors. These trials have shown significant reduction in the expression of taints created by Brettanomyces (4EP), smoke (4EG), geranium taint, lady bug taint, pyriazines and sulfur compounds.
